Ensalada de la Mancha

August greens from local farm fields. Manchego cheese, shaved. Sweet fresh peaches, sliced. Walnuts, crumbled. 

Drizzle with a Balsamic vinaigrette, or just Balsamic.

That’s it. El Cielo meets Sancho. Cervantes notwithstanding. Perfecto.
