A spicy brunch to warm you up on these dank days of June. Just for you. In a small skillet, melt a little butter and crack two farm fresh eggs, or one egg plus one egg white. Break the yolk(s). When set turn over and shred a little cheddar, jack, or your favorite mild cheese. Pop under the broiler until cheese melts. Serve topped with a chunky fresh salsa, or chopped fresh tomato and diced jalapeños. Que picante y sabroso.
